Hog 

1. Carcass weight is 72% of live weight      

-Take home weight is 66% carcass weight    

- The more you have ground the less # of take home

   -As a rule of thumb you can figure take home weight is about 45-48% of live weight

   -since take home can be different depending on how you cut it , freezer pork is priced by the carcass/hanging weight

300# L.W. =216 #CCW= 144 # take home

These numbers are based off of averages, different breeds will yield different and the way they are fed will also play a role.

2. On average the Carcass is broken up in the following %:  

 -11% bone and trim loss(waste)   -16% Ham,    -12% loin roasts, chops   -13% bacon   -8% sausage   -17%Shoulder roasts & chops   -3%spare ribs    - 20% Lard

3. If you have special instruction the processing may cost a little more. 

Ex: pre seasoned sausage is $0.69/#

Prices for processing are subject to change depending on the way you want it cut and assuming prices are not raised.  If there is a price change receipt showing change in price will be provided
